Lentil and Pumpkin pie
It was delicious.
What he did
First make a Dahl like lentil mixture. Fry the onion in a little sunflower oil. Add the lentils and a cup and a half of cold water.
Bring to the boil then simmer until the water reduces significantly. The lentils will gradually disintegrate.
Meanwhile line a tray with baking paper. Place a rectangular piece of pastry on the tray. Then put a layer of lentil mix in the middle in a stripe. Add some pumpkin sticks. Then repeat the lentil and pumpkin layer.
Fold the pastry over the filling.
Put it in the oven at 180 degrees for 25 mins or until the pastry is nicely golden brown.
We ate it with peas and sweet potato. It was so delicious.
