So I came home and felt a bit in need of chilli and garlic in order to improve my sore throat.
Pressed for time and lacking in enthusiasm, I peered into the food cupboards.
I decided to try something a bit odd.
We had rice, we had beans, we had a few other things. So I thought I’d give it a go. Substitutions will work. I used what we had.
And so Mexican risotto was born.
Ingredients
Sunflower oil
Two chopped shallots
Three cloves of crushed garlic
A dried chilli
Half a diced red pepper
A tin of black beans
A small tin of sweet corn
Half a tin of tomatoes
A mug of rice
Half a packet of burrito mix
Serve with grated cheese
What I did
So I heated the oil and fried the onion. Then I added the rice and stirred for a bit.
I added one mug of water and the burrito mix.
I added the garlic and chilli.
After a bit when it was getting angry I added another mug of water.
I then added each of the other ingredients. Starting with tomatoes. Then each of the others in no particular order.
Stirred it from time to time.
That was it.
Served with grated cheese. It was lovely.
