Haloumi Delights

“I’d really like Haloumi for dinner.” I said as I went out the door. There was some in the fridge.

Haloumi is a wonderful thing. It’s cheese that can be grilled. It doesn’t melt it just goes brown.

It’s one of my favourite things.

But then the resident chef (/beekeeper/gardener/handyman) did something magical.

There was a box of gluten free couscous in the cupboard.

He took the following:

  • Onions
  • Fresh Tomatoes
  • Tomato purée
  • Shoarma spice
  • Aubergine
  • Mushrooms
  • Red bell pepper
  • Garlic
  • Fresh coriander (cilantro)
  • Chilli
  • A teaspoon of sugar

Then he made the most amazing stewy sauce.

Meanwhile falafel joined the Haloumi in a pan. All very Middle Eastern.

The couscous was made entertaining with coriander and fresh mint.

It was delicious!
