Delicious snack Lunch

every now and again the resident chef produces another amazing dish by accident.

The other day the lunch provided such a moment.

I’m not sure I can fully describe it but basically. This yummy pile comprised the following.

  • Toasted gluten free bread
  • Grilled courgette slices
  • Finely sliced shavings of Parmesan
  • Toasted sunflower seed and pinenuts
  • Grated fried beetroot
  • Dehydrated kale chips
  • Grated cheese heated with a wee burner

I will check with him in case there was something else but it was basically the tastiest thing I’ve eaten in ages.

It was one of those ‘I’m so glad I’m vegetarian!’ moments.

Do you have a simple delicious dish you really enjoy?
