The easiest jam you’ll ever make. And probably the fastest.
Had to share the smart part of the process. It’s so colourful. In yesterday’s post we poured about a litre of boiling water on six flower’s worth of petals.
I said leave overnight but it was probably about five hours.
The lovely purple disappears into greenish blue.
It looks quite revolting.
As soon as you add sugar and a bit of heat. It’s a different story again.
It needsto be on a rolling boil for at least four mins. I usually do six.
Meanwhile I heated the jars in the microwave with some water in them.
Then it’s as simple as this.
Just find yourself a lilac tree in bloom.
I’m intending to make more , hopefully from a paler variety.
