Put the Kettle on … Part 2

The easiest jam you’ll ever make. And probably the fastest. 

Had to share the smart part of the process. It’s so colourful. In yesterday’s post we poured about a litre of boiling water on six flower’s worth of petals. 

I said leave overnight but it was probably about five hours. 

The lovely purple disappears into greenish blue. 


It looks quite revolting. 


As soon as you add sugar and a bit of heat. It’s a different story again. 

I use one and one third pectin sugar to the volume of liquid. So this time it was 950ml of liquid to 1.3kg sugar roughly. 

It needsto be on a rolling boil for at least four mins. I usually do six. 

Meanwhile I heated the jars in the microwave with some water in them. 

Then it’s as simple as this. 

Can’t say it takes any more that thirty minutes to make. It’s really simple and very effective. The tiny blob of waste flower pulp that’s left is ridiculously frugal. 

Just find yourself a lilac tree in bloom. 

I’m intending to make more , hopefully from a paler variety.
