The planet is our home; we need to be more responsible. Here's what I do.
As part of my ‘Chuck it out’ Challenge I started looking at some of the weird and wonderful things in my food cupboards.
I have a weak spot.
I buy food stuffs. Odd food stuffs. Often associated with our vegetarian and gluten free habits.
Things like xanthan gum which replaces the elasticity when not using wheat flour.
And nutritional yeast which is handy for a specific type of flavour in veggie cooking.
I also seem to collect grain replacements. Almond flour, garbanzo flour, rice flour, you name it I’ve probably got some.
The drawback is that I don’t cook with them. I just have them in the cupboard. Crazy, Eh?
So I’ve decided to start trying to use them up.
I have a gluten free magazine with some amazing ideas in it so that’s going to help.
The first one is for chocolate brownies that have aduki beans, linseed, ground almonds and cocoa powder. What a weird combination right?
So I’m off to sort it out. The beans need soaking as I didn’t have tinned ones.
It could take a while but I’m very optimistic. And hopeful at using some of the stuff up.

Look, it worked!
I had a few challenges including using dried beans which I had to accelerate rather than weight eight hours.
I looked that process up here.
Then I had to substitute the sunflower oil required with olive oil as that was what we had and I didn’t add vanilla essence. I do want to try it again with sunflower oil and the vanilla essence but it was lovely anyway.
Who would’ve thought beans would be good in brownies?
