Winter warming ‘Fast Food’ Leftovers

Its cold outside. Dark and windy.
Late home from work. Cold and tired.

What’s in the fridge?

A pack of left over raclette cheese!

So how to utilise that without the whole raclette thing.

Here’s an idea.

Take a large red onion and finely slice.
Take a couple of medium sized potatoes and finely slice.
Build into layers in an oven dish.
Add a splash of (soya) milk. (Half a cup)
Top with cheese.


Pop it in the microwave.
Blast for twelve minutes.
(Now bear in mind this was fast food. If you wish to cook it in the oven then you can.

Serve with some stir fried bell peppers and leeks.


And a vegetarian sausage.
