For the first time in ages we’ve got beetroot and I think this could be their destination!

So I LOVE BEETROOT… just thought I’d shout it out!
Perhaps it was the Russian influence in my upbringing and the wonderfulness of being surrounded by beautiful bowls of bright crimson Borscht soup and pretty pink potato salads with pops of fresh green peas, that has me hooked…
I don’t know – but I’ve got it bad.
So whilst meandering around the market the other day with my friend Leanne, I got so excited that I squealed when I saw the most wonderful bunch of Beetroot I’d seen in ages. How could I not buy it, cook it up and feast on it? Before I knew it, the large leafy bunch was in my arms and in my trolley! I was happy.
I bought it so I could make my Beetroot relish…it goes with everything.
