Mushroom Vegan Cerviche Peruvian style

I’ve waited a long time to see what this was like.

And finally our friend who grew up in Peru got the notion. We could’ve made it ourselves but the authentic Peruvian angle was significant.

What we used:
500g of sliced mushrooms
1 large finely sliced red onion or 3 shallots
3 cloves of crushed garlic
1 hot red chilli chopped (to your taste)
8 limes thoroughly juiced
3 sticks of very finely chopped celery
1 cup coriander chopped
Salt and pepper

To serve
Boiled sweet potato and crispy lettuce leaves.

What we did
First get all the elements ready
Soak the onion in water for twenty minutes then drain.
Place sliced mushrooms in a bowl and add onion, garlic, chili and celery.
Then add line juice and mix thoroughly.
Leave to stand for 15 minutes or so. Basically until the mushrooms start to look ‘cooked’ by the lime juice.

Eat with sweet potato and lettuce leaves.

It was delicious! Perfect for the hot summer day when we ate it!

    Wow – that does sound good! But I’m afraid my current punnet of mushrooms are destined for the not-vegan mushroom, blue cheese and sage pasta sauce. Maybe next time!
