The planet is our home; we need to be more responsible. Here's what I do.
Food on Friday
The talented cook in the house is a genius.
I take him to restaurants.
We come home.
Then he duplicates the food.
How awesome is that?
So not being faint hearted, he embarked on raw Vietnamese spring rolls.
The board pictured was the start.
Finely shredded carrot
Finely shredded spring onion
Finely shredded cucumber
(Finely shredded red pepper)
Toasted crushed peanuts
Romaine lettuce leaves
Chopped fresh mint leaves
Chopped fresh coriander leaves
What we did:
1. Using a lettuce leaf as a holder, assemble a sausage shape combination of the ingredients according to your own taste.
2. Fold in the stalk end of the leaf and use it’s natural curve to roll the leaf around the ingredients.
3. Use a water soaked cloth to soften the rice paper. Follow the instructions on the packet.
4. When the rice paper is ready, lay the filled leaf on the paper and wrap it around.
Repeat with remaining ingredients.
Serve with chilli sauce.
