So there’s a connection between small communities and tackling bigger problems. We have a local example that illustrates local action very nicely. In Holland people are beginning to recognise that there are many people with gluten intolerance. One such resident who lives near The Hague has started her own business. The Welsh Bakestone was set up in September 2012 and is now a thriving business. Yvette, the owner, provides people from all over Benelux with delicious gluten free alternatives to bread, pies, quiche and cake.
She also stocks local honey.
